Can I compare a PDF with a Word document?

Yes. Text is extracted from both before comparison, so the source formats do not need to match.

Will it catch a single changed word?

Yes — including the ones that matter most, like "shall" becoming "may", or a cap changing from "fees paid" to "fees payable".

How is this different from track changes?

Track changes shows what was edited by someone who chose to leave it on. Comparison works on the final files regardless, and adds an assessment of what each change does to your position.
